Recipe: Gluten Free, Low Carb Pizza by Ellen Picton, Healthaspire

Check out this gluten free, grain free, low carb pizza,  loaded with good fats and protein. 

 

Pizza Dough

  • 150g ground almonds

  • 1 tbsp corn flour (sieved) (makes the base crispy)

  • 30g cheese of choice – if using vegan cheese, add 1 tsp olive oil

  • 1 egg

 

Method

  1. Preheat oven to 180°C.

  2. Mix all dough ingredients in a bowl until a sticky dough forms.

  3. Line a baking tray with greaseproof paper.

  4. Spoon the mixture onto the tray, cover with another sheet of paper, and roll out with a rolling pin — not too thick or thin.

  5. Bake on the middle shelf for 10 minutes.

  6. Peel off the top layer of greaseproof paper and add toppings.

Topping

  • 100ml passata

  • 2 tbsp pesto

  • Then decorate as you wish 🙂
    (e.g. chorizo, peppers, red onions, cayenne pepper)

  • 10g grated cheese — you don’t need much as the base is already cheesy

 

Bake for another 5–10 minutes, slice, and serve!
